Whoa! I have been spending way too much time outside. The weather has been beckoning me and I cannot resist. I have missed writing and have failed miserably on keeping up on my blog.
What’s new in our life? Well, like I said, we have been enjoying the weather. We grilled burgers with friends on Saturday night and had Seth’s parents over for grilled filet mignon (yum!) on Sunday night. Fact: We are carnivores and devoured a lot of red meat this weekend. I made these awesome mint mojitos, which were so refreshing and really hit the spot. (Recipe is listed below.)
Work has been picking up for me. I plan events and it’s no wonder that summer is our busiest time of the year. I love the excitement that comes with all of my events, especially the weddings that I get to plan. It makes going into work on a Saturday a lot easier when you love what you are doing.
I love having Mondays off to refocus my energy and reground myself. I meal plan, make my grocery list, run errands and go to appointments. Typically, I clean a room in the house and always take Calvin on a run/walk (Winnie is just a bit too small still!).
Sometimes I make a new recipe. In the midst of the daily tasks, I find a little “me” time. I have been reading Me Before You by Jojo Moyes. If you have not read this book, I highly recommend it. I am not the most avid reader, but when I find a good one, I can’t put it down. As a bonus, it’s coming out as a movie on June 3.
We are watching Winnie grow up right before our eyes. I swear, each day, she gets a little bit bigger, a little bit faster, and a little bit smarter. She doesn’t sleep in our room. I know, I can’t believe it myself, but we have been crating her at bedtime and she sleeps in the living room. I think she was getting up every time she heard us move in the night. We have somewhat figured out our nightly routine and instead of getting up every two to three hours, we are just waking up with her around 5:30 A.M. It’s not ideal, but it’s better than the routine we had before.
Winnie loves to play with her brother, Calvin. She initiates play by biting on his tail, and then he’s all in. She also sneaks up to our bed (she figured out how to use the dog stairs a few weeks ago) and takes a snooze every once in a while. She still can’t quite figure out how to get down from the bed yet. She loves to play with her stuffed animals, and is stumbling around dragging my flip-flop into the living room as I type this.
Calvin is doing really well with her. I’m almost in disbelief of how well they get along. He loves to play and chase her around the yard. Sometimes I think he bites her a little too hard, but she seems to like it.

- Mint leaves (get a bunch from the grocery store or your garden)
- Limes (3)
- Sugar (1 tbsp. per serving)
- Water (1 tbsp. per serving)
- White Rum (1 ounce per serving)
- Soda Water
Decide how many mojitos you would like to make. I made enough for six servings, so I multiplied my sugar, water and rum by six.
Muddle two limes and your mint leaves in a pitcher. If you don't own a muddler, like myself, use a spoon and get to work.
Combine your sugar and water in a pot on the stove. Bring to a boil. Once sugar has dissolved, remove from heat.
Next, pour the sugar water (aka: simple syrup) into the pitcher with the mint and limes. Pour the rum over and give it a good stir.
Fill your glasses with ice and garnish with the third lime. Pour the rum mixture into the glass until it is about 1/3 to halfway full. Top with soda water.
You can add more lime, mint or rum to the drink, based on your preferences. :)
